Verification vs. Validation in Food Safety: Why the Difference Matters
By Anu Bernier, is a food safety professional with decades of experience helping food and beverage businesses turn food safety principles into practical, effective systems. With deep expertise across GMP, HACCP, food safety management systems, regulatory requirements, and leading GFSI standards including BRCGS, SQF, and FSSC 22000, she brings both scientific knowledge and real-world industry insight to her work. Through her writing and training, Anu makes complex food safety topics easier to understand, offering practical guidance that professionals can confidently apply in their everyday operations.
Introduction
What Is Validation?
- Peer-reviewed scientific literature (e.g., published pathogen lethality studies)
- In-plant validation studies — challenge studies, thermal mapping, heat distribution studies
- Regulatory guidance — CFIA publications, FDA and USDA “safe harbor” processes
- Equipment specifications from the manufacturer (validated flow rates, temperature capability)
What Is Verification?
- Reviewing CCP logs and monitoring records – FSMA requires this within 7 working days of the record being created
- Direct observation of staff performing a task – watching, not just reading a log
- Testing — environmental monitoring, finished product testing
- Internal audits confirming the system as a whole is functioning
Why the Distinction Matters
Three Real-World Examples
- Thermal processing: Validation is the challenge study or scientific literature proving a specific time/temperature combination achieves the required pathogen log-reduction. Verification is the daily CCP log review, calibration checks, and periodic re-validation whenever the oven, recipe, or line speed changes.
- Environmental monitoring for Listeria: Validation is establishing, scientifically, that your sanitation SOP and chemical concentrations are capable of eliminating environmental pathogens. Verification is the routine swabbing program, Zone 1-3 trending, and corrective action when you get a positive.
- Metal detection: Validation is confirming the detector reliably picks up the specified test piece size at full production line speed. Verification is the shift-start/shift-end test piece check and the record review confirming it actually happened.
Closing the Gap Before Your Next Audit
- Revisit your validation file whenever something changes – equipment, recipe, supplier, or line speed. A validation study from five years ago on a machine you’ve since replaced isn’t worth much.
- Don’t let verification become a rubber stamp. If your records are signed off for an entire week in the same pen on a Monday morning, that’s a red flag to an auditor – and a signal that a check isn’t meaningful.
- Make sure your team can explain the difference. If your operators – not just your QA manager understand what they’re verifying and why it was validated that way, you’re in a much stronger position when the auditor starts asking questions.
